You will need…
- about 25 elderflower heads
- zest of 3 un-waxed lemons
- juice and zest from one orange
- 1 heaped tsp citric acid
- 1kg sugar
Check elderflower heads for insects, and remove. Place flower heads in a large bowl with the orange and lemon zest. Boil 1.5l water and pour over elderflowers and citrus zest. Cover and leave overnight. Strain liquid through a jelly bag .Then pour liquid into a pan. Add sugar, lemon and orange juice, as well as citric acid. Heat gently to dissolve the sugar, then bring to boil and simmer for two minutes. Use a funnel to pour syrup into sterilised bottles. Seal with cork or swing-top lids.
After we made this at school I made it with my family. I really enjoyed it!
